Pancakes

Ingredients:

  • All purpose flour (2 cups)
  • Baking powder (5 teaspoon)
  • Egg (1)
  • Vanilla Essence (1/2 teaspoon)
  • Butter (4 tablespoons; melted)
  • Milk (1 1/2 cup)
  • Salt (1/2 teaspoon)
  • Sugar (3 tablespoons)

Directions:

In a medium sized mixing bowl measure out the flour, salt, sugar and baking powder. Using a whisk or a wooden spoon combine the dry ingredients together.

In a smaller bowl, crack an egg and beat it then add the melted butter, milk, and vanilla extract. Give it all a thorough mix.

Pour the wet ingredients into the bowl with the dry ingredients and using the whisk/wooden spoon fold the pancake batter together. Make sure to scrape the sides and the bottom of the bowl to evenly combine everything. Stop as soon as you stop seeing any dry ingredients.

Heat a frying pan/cast iron on medium heat. Grease the pan with oil/butter and pour a ladle of the pancake batter. Cook the pancake for 2-3 minutes until the edges are set and bubbles start forming. Use a spatula to flip the pancake over and cook for another minute.

Serve the pancakes with maple syrup, berries.
