- Spinach (2 cups)
- Wheat Flour (2 cups)
- Salt (to taste)
- Water (as required)
- Oil (as required)
Rinse the spinach thoroughly.
In a saucepan, bring water to a boil and add some salt. Add the spinach and cook for 2- 3 minutes and then strain out the spinach leaves and put it over an ice bath to stop it from cooking any further.
Take the spinach out and put it in a blender and blend it to a fine paste.
In a large bowl, add the wheat flour and season it with some salt. Add the spinach paste and start mixing it together, and knead it into a dough. If the dough is dry, add some water, and if it’s too wet add some flour.
Finally, add some oil and knead it for another couple of minutes and leave it to rest for 10 minutes.
Divide the dough into equal parts and form them into balls.
Dust the surface with flour and then roll out each of the balls into a circle.
Heat up a pan and cook roti on both sides for 2-3 minutes on medium heat till golden brown spots appear on both sides and serve hot.
