
Ingredients:
- Spam (12 oz; one container; I used the less sodium one)
- Psyllium Husk Powder (1 cup)
- Eggs (2)
- Coconut Flour (1/2 cup)
- Pepper
- Oil (any oil fo your choice)
Directions:
Heat about 4 inches of oil in a deep pan on medium heat.
Cut the spam lengthwise into slices and then cut each of the slices into equally sized matchsticks.
In a dish beat the eggs and add some freshly ground pepper. Do not add any salt since the spam is salty.
Place the coconut flour and the psyllium husk in two separate dishes.
First coat the spam stick with coconut flour and then dip it in the egg wash and make sure all sides are coated and then finally coat the spam sticks with the psyllium husk and dust off any excess. Repeat the process for all the spam sticks.
Once the oil is hot cook the spam sticks turning frequently until browned on all sides. Make sure not to overcrowd the pan. Serve it with your favorite dip.
