
Ingredients:
Filling:
- Ground Beef (2 pounds)
- Carrot (2; grated)
- Lotus root (2 inches; finely chopped)
- Ginger (1 inch; finely chopped)
- Garlic (4 cloves; finely chopped)
- Green onion (2 springs; finely chopped)
- Cornstarch (1 tablespoon)
- Soy sauce (1 tablespoon)
- Shaoxing wine (1 tablespoon)
- Salt (to taste)
Wrapper:
- Flour (2 pounds)
- Water (1 cup)
Directions:
In a bowl, add the ground beef, carrot, lotus root, ginger, garlic and green onion. Mix it all together.
Add the cornstarch, soy sauce, shaoxing wine and salt and mix it in to the meat mixture and set it aside.
Add the flour and water into another bowl and knead it for 5-10 minutes and set it aside for 15-20 minutes.
Cut the dough into four equal portions and then roll out each of them. I used a pasta roller and ran it till the 4th setting. Using a round cutter, cut the dough into smaller wrappers. In a plate or baking sheet dust some flour and place the wrappers on it.
Take a tablespoon of the meat and spread it over the wrappers.
Heat up a pan/cast iron griddle and spray some oil. Put the meat wrappers, meat side down first and cook for 2-3 minutes on medium heat and then flip it over and cook for another minute till the wrapper is crispy.
For a dipping sauce, in a bowl add couple of tablespoons of soy sauce with quarter cup of water and some roughly chopped green onions.
