
Ingredients:
- Zucchini Noodles (10 oz)
- Avocado (1; peeled, pitted and diced)
- Basil Leaves (1/2 cup)
- Walnut (1/4 cup)
- Garlic (2 cloves)
- Lemon Juice (1/2 lemon)
- Parmesan Cheese (1/4 cup)
- Olive Oil (1/4 cup)
- Salt (to taste)
- Pepper (to taste)
Directions:
In a blender, add the avocado, walnut, basil leaves, garlic, lemon juice, salt and pepper and pulse it till it’s fine and then gradually add the olive oil into the blender till you have a fine paste. Finally, add the Parmesan cheese and blend it for another minute.
In a pan, add a tablespoon of olive oil and then add the zucchini noodles. Season it with salt and pepper and keep tossing it around and let it sweat and then add the avocado pesto into the pan and then toss the noodles around to get it coated well and cook for a couple of minutes and then turn off the heat.
Add a little dash of Parmesan or more as per your liking.
