Pizza (Without Yeast)

Since the beginning of quarantine that one commodity that’s been very difficult to find in Boston is YEAST!!! The whole of Boston decided to start baking banana breads and Focaccia and at this time my craving for pizza was getting worse by the day. So I had to find a way to make pizza without yeast!! Hope you enjoy this recipe!

Ingredients for base:

  • All Purpose Flour (2 1/2 cups)
  • Baking Powder (3 teaspoons)
  • Olive Oil (1 tablespoon)
  • Salt (1 teaspoon)

Sauce:

  • Olive Oil (3 tablespoons)
  • Anchovy Fillets (2 fillets)
  • Garlic (4 cloves; minced)
  • Oregano (2 tablespoons; if you can find fresh oregano or else add add dried oregano)
  • Red Pepper Flakes (1 teaspoon)
  • Whole Peeled Tomatoes (28 ounces)
  • Baking Soda (a pinch)
  • Sugar (1/2 teaspoon)
  • Salt (to taste)
  • Pepper (to taste)

Toppings:

You can add whatever toppings you like. These are some ingredients I used in mine.

  • Pepperoni
  • Artichoke Hearts
  • Dill (chopped)
  • Basil
  • Garlic Oil
  • Shredded Mozzarella Cheese

Directions:

We will first start off with the sauce. In a pan, add the olive oil and set the heat to medium-low. Add the anchovy fillets into the pan, once the anchovies starts to sizzle add the minced garlic in and cook for a minute.

Add the oregano at this point and turn the heat to low and cook for a minute. Then add the chili flakes and cook for additional 15 – 30 seconds.

Add the tomatoes into a bowl and crush them with your hands or using a fork till they are smooth and then add them into the pan and give it a mix and turn the heat up to medium. Add salt, pepper, sugar and the baking soda and simmer for 30 – 45 minutes. Once cooked set it aside and let it cool.

For garlic oil, in a pan add 1/4 cup of olive oil with 1 tablespoons of minced garlic and set it at low heat and once the garlic starts to sizzle turn off the heat and set it aside.

Preheat the oven at 400oF/200oC

For the pizza dough in a mixing bowl, combine the flour, baking powder, and salt. Whisk until thoroughly combined and set aside.

Make a well in the center of the mixing bowl and add the oil and add water little by little and start mixing in the flour mixture and knead it till the dough is soft and not sticking to the bowl. Add splash of water if the dough is dry or dust in some flour if too wet.

If you want a circular pizza, lightly flour your working surface and then using a rolling pin roll it out into a circle. I used a sheet pan to bake my pizza instead of rolling it into circle I rolled it out a little and the lightly dusted the sheet pan and placed the dough into the pan and then using the palm of my hand pressed the dough to stretch the dough out to fill the pan.

Once you have the dough rolled out, spoon the pizza sauce and spread it all over the dough. Cover generously with a layer of cheese and then add the pepperoni, artichoke hearts, chopped dill, basil leaves.

Bake the pizza in the oven for 15 minutes or until golden brown. Finish it off with a drizzle of the garlic oil and slice and enjoy!!!

Toppings: pepperoni, Italian hot sausage, mozzarella cheese and basil leaves
