
Ingredients:
- Bitter Gourd (2-3)
- Chili Powder (1 tablespoon)
- Turmeric Powder (1/4 teaspoon)
- White Vinegar (2-3 tablespoons)
- Salt (1-2 tablespoons)
- Oil (3-5 tablespoons)
Directions:
Cut the bitter gourd lengthwise into halves and remove the seeds from the inside. Slice the halves into roughly two-inch long cubes and finally slice the cubes into thin sticks.
Add the bitter gourd sticks into a saucepan and add all the other ingredients (except oil) and give them a nice mix till the spices have coated the bitter gourd evenly. Leave it for 5-10 minutes.
Place the saucepan on medium-low heat and let all the liquid from the bitter gourd evaporate. This also helps the bitter gourd to absorb all the spices.
Place a frying pan on medium heat, add the oil and once the oil is heated up, add the bitter gourd and fry them for 7-10 minutes flipping them occasionally till the bitter gourd is somewhat crispy. Serve it with rice as a side, best to have it with parippu curry or moru curry.
