- Rice (3 cups)
- Carrot (2-3 carrots; diced)
- Green Peas (1 cup)
- Green Beans (1 cup; sliced 1/2 inch)
- Cauliflower (cut florets into small pieces)
- Water (6 cups)
- Lemon Juice (1/2 lemon)
- Cilantro (half a bunch; finely chopped)
- Salt (to taste)
- Pepper (to taste)
- Ghee (2 tablespoon)
Rinse the rice thoroughly and then soak it in water for 20-30 minutes.
In a deep pot, add ghee and once hot add all the vegetables and cook them for 7-8 minutes or until the carrots are soft. Season the vegetables with salt and pepper.
Meanwhile, in a saucepan, bring the water to a boil.
Drain out the water from the rice and then add it to the pot and stir it all together and let it cook for a couple of minutes.
Add the boiling water into the pot and add more salt to taste and give it a final mix and cover the pot with a lid and let it cook on medium heat for 5-10 minutes or all the water is gone and the rice is cooked all the way through.
Take off the lid and using a fork fluff up the rice, then add in the lemon juice and chopped cilantro and give it a gentle stir.
